Le Bercail has a slightly aged rind, is very soft with a delicate flavor that is especially enjoyable when eaten fresh.

As it ages, it becomes increasingly firm in texture and develops an amber colored rind, which contributes to a strong and flavorful taste


Serving Suggestions :
	On a cheese plate
	On canapés or sandwiches of rye bread or sourdough
	As an entrée with oil on a bed of green leaves
	Delightful as a buffet item with croutons and a thin strand of hot maple caramel drizzled on top
